Our Food Philosophy
So what's foodism? We like to think of it as the philosophy of the foodie. So what's a foodie? Some definitions: "a person who has an ardent interest in food" and "a person that spends a keen amount of attention and energy on knowing the ingredients of food, the proper preparation of food, and finds great enjoyment in top-notch ingredients and exemplary preparation." That pretty much sums up our attitude.

Foodism goes beyond deliciousness. For us, being foodies goes hand in hand with our sustainability ethic. Whenever we can, we buy locally grown or produced ingredients. When we're dining out, we seek out small, locally-owned restaurants. Most of the meals our guides prepare are "gourmet vegetarian." And when we have a choice, we work with small, locally owned grocers on our tour routes, helping to support local economies. These practices aren't just a strong step towards sustainability — they make good old-fashioned sense. Local grocers are often able to provide us with the freshest, most delicious produce, straight from nearby farms and gardens. And then there's the avid cyclist chef at Cuveé, in Carlton, Oregon, who is keen to take our guests on "a little ride up the mountain..."
